Why Washing Ribs in Your Sink is a Bad Idea

Ribs typically have the membrane that covers them removed before being served because this makes the meat easier to chew. The membrane is an elastin and protein layer that remains intact even after the product has been smoked.

To put it another way, it makes your mouth feel uncomfortable and chewy.

A condensed version:

1. Use a paper towel to gently pat dry the membrane so that it is less difficult to work with.
